If you guys are not harvesting your cilantro with a cut and come again method. I hope that you give it a try and this is the same thing that you would do with basil and other herbs. So, you will get a more leafy green harvest, instead of harvesting the whole plant at once. We usually grow them densely or in masses. Some of the patches are actually self-sown or have self-seeded from the plants, from the year prior. How I usually harvest them is I usually top them off which will encourage the plant to grow more foliage or leaves. So, when you look closely at your cilantro you will see tiny leaf buds which will grow into a side stem. What you want to do is just pinch off the top and you can use your garden shears. I usually just pinch it off, right above the leaf node.

You can start harvesting your cilantro with a cut and come again method once they are about 6 to 8 inches tall. Cilantro matures in about 45 to 55 days. You can also tell when cilantro is about to bolt or flour is when the leaves start to grow smaller. They actually start to look like carrot leaves and they are in the same family. You will also notice the smaller leaves on any other herb as they start to mature and produce flowers the leaves grow smaller. Then, you will start to see flower buds appearing in the center. Its flowers resemble carrot flowers as well as parsley celery or even chervil, they are all in the same family.
